Joseph Boon
Executive Chef, Spice Islands Indonesian Restaurant Joseph
is an Indonesian Chinese born and raised in Amsterdam, Holland.
His career path took him to Canada, Germany and Hong Kong, but he
chooses to live in beautiful BC where the multicultural rhythm is
rich and vibrant. He now calls Vancouver his home and Spice Islands
Indonesian Restaurant his headquarter where he can create and share
the sensational taste of Indonesian dishes.
Joseph’s mother Mrs. Boon, a graduate from top Indonesian
Culinary School in the early days, owned and operated a catering
company in Toronto during
the 60’s and 70’s, the time when Joseph developed strong
interest in cooking. “My mother showed me the difference between
good food and bad cooking. She taught me how to appreciate food
and the keys to creating the best sauces.” Joseph recalled
the days when he sat and watched his mom whipped up a simple but
delicious dish and he would be the first official taster. “My
mom showed me what authenticity in food was all about. She is definitely
my inspiration!”
After working in Europe and Asia, Joseph returned to Vancouver
in 1994 and worked in the hotel and restaurant business. While the
colourful Asian culinary scene of the west coast offered him all
kinds of dining pleasure, he was always looking for a true Indonesian
restaurant that served authentic Indonesian dishes, those his mom
would make.
The hunt turned into a thought. The thought turned into a vision
– to open his very own Indonesian restaurant! By 2001, Joseph
was able to make that vision a reality.
Joseph loves food, enjoys cooking. He studies herbs and spices
and develops his own recipes. He is passionate about creating dishes
that not only satisfy the palate but soothe the soul as well. “My
kitchen is my sanctuary, I go there to relax. And I wish customers
feel the same way when they step into Spice Islands.” Joseph
believes his cooking technique, his passion on Indonesian cooking
and his desire to introduce the true taste of Indonesia to Vancouverites
will strongly support his restaurant venture.
On July 19th, 2003, Spice Islands Indonesian Restaurant opened
its door on
W. 41st and Dunbar. In order to deliver unique and authentic Indonesian
dishes, Joseph and his partner, Sous Chef Grace Yu, choose and mix
perfectly-balanced spices, make their own sauces from scratch and
create seasonal dishes using local produce and fresh seafood. Dishes
such as Singang Ayam (Sumatran grilled Chicken) Asam Babi Goreng
(Tamarind pork), Gulai Lidang (Creamy curry prawns) and BC Wild
Salmon in special sauce keep patrons coming back for more. |
